Apple Oat Muffins

Ingrediants: 

1 C rolled oats

3/4 C applesauce

1/2 C almond milk

1 egg

1 tsp vanilla extract

4 tbsp melted coconut oil

1/4 pure maple syrup

3/4 C gluten free baking flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/4 tsp salt

1 cup diced apples

Preperation:

1) Preheat oven to 375 F and spray 12 muffin cups. Set aside.  

2) In a large bowl wish together oats, applesauce, milk, egg, vanilla, coconut oil and maple syrup.  

3) In another bowl wish together your remaining dry ingrediants.  

4) Make a well in the dry ingrediants bowl and pour your wet ingrediants in. Combine but DO NOT over mix. Fold in your diced apples.  

5) Spoon the batter evenly into your muffin tins and bake for 15-20 minutes. Test with a toothpick. It should come out clean. Enjoy!
