Cinnamon sweet potatoes


2 large sweet potatoes

2 tbsp olive oil

1/2 cup died cranberries

Cinnamon to taste

Peel and dice your sweet potatoes into small chunks.  Place chunks into into a bowl and coat with olive oil. Sprinkle with cinnamon and toss to coat. Spread onto a baking sheet and roast at 400 for 20 minutes. Flip potatoes and roast for another 10 minutes until soft.  Remove from tray and toss with cranberries.  This is is a great pre or post workout snack!
