Mexican Egg Skillet


1-2 eggs

1 lb grass fed beef 

1 whole diced pepper

1/2 diced sweet onion

1 large diced zuchinni

3/4 cup beef broth

Taco seasoning (I make my own with chili powder, smoked paprika, garlic salt and red pepper flakes)


I make this recipe in a crockpot because I am all about simple!  I put all my ingredients in making sure the broth covers the bottom of the pot.  I cook on high for 4 hours and done!  In the morning I scoop out 1 cup of the mixture and top it with 1-2 over easy eggs.  I garnish with 1/2 a sliced avocado and salsa.  It makes for a high protein breakfast with a serving of veggies and healthy fat.
