Garlic Lemon Chicken


  • 1 lb boneless, skinless chicken thighs
  • 4 cloves garlic
  • 1/4 cup chicken stock
  • 2-3 tbsp lemon juice
  • 2 tbsp EVOO
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • Fresh ground pepper to taste


  1. Combine your lemon juice and chicken stock in the bottom of your crockpot.
  2. Rub your chicken thighs with the EVOO, garlic, salt, pepper and oregano.
  3. Place in the crockpot and cook on high for 4 hours.

*This chicken is amazing on its own or over a fresh kale salad!
