- 1 lb boneless, skinless chicken thighs
- 4 cloves garlic
- 1/4 cup chicken stock
- 2-3 tbsp lemon juice
- 2 tbsp EVOO
- 1/2 tsp dried oregano
- 1/2 tsp sea salt
- Fresh ground pepper to taste
- Combine your lemon juice and chicken stock in the bottom of your crockpot.
- Rub your chicken thighs with the EVOO, garlic, salt, pepper and oregano.
- Place in the crockpot and cook on high for 4 hours.
