Coconut Chicken Lentil Soup

 Ingrediants:

  • 1 tbsp olive oil
  • 3 cloves minced garlic
  • 1 shallot chopped
  • 2 large carrots sliced
  • 3/4 tsp ground turmeric
  • 1 tbsp freshly grated ginger
  • 1/2 tsp cumin
  • 1/2 tsp curry powder
  • 1/8 tsp cayenne
  • 3 cups chicken broth
  • 1 (15oz) can coconut milk
  • 1 cup lentils rinsed
  • 2 cups shredded chicken
  • Salt and pepper to taste  
  • cilantro for garnish

Preperation: 

  1.  Add olive oil to large pot over medium heat. Sauté garlic, shallot, and carrots for 5 minutes stirring occasionally.  
  2. Add spices (turmeric, ginger, cumin, curry and cayenne and coat the veggies.  
  3. Add chicken broth, coconut milk, lentils and shredded chicken. Stir to combine. Add salt and pepper as you like.  
  4. Bring to a boil then reduce to a simmer for 45 minutes. The sauce should thicken up.  
  5. Garnish with cilantro and enjoy!
