Paleo Friendly Gumbo

 Ingrediants:

  • 2 lbs boneless skinless chicken thighs
  • 1/2 lb smoked sausage
  • 1 lb shrimp
  • 2 bay leaves
  • 1 yellow pepper diced
  • 2 celery stalks chopped
  • 1 C chopped okra (can use frozen)
  • 1 yellow onion chopped
  • 4 tsp minced garlic
  • 1 C sliced cherry tomatoes
  • 6 oz tomato paste
  • 3 C chicken broth

Spices:  I estimated with all of these. About 2 tsp of each spice. No need to stress over exact amounts. 

  • Cayenne
  • red pepper flakes
  • onion powder
  • paprika
  • old bay
  • oregano
  • thyme
  • salt
  • pepper

Prep: 

  • Put all your ingrediants, except the shrimp, into a crockpot and stir to fully combine.  
  • Cook on low for 6 hours or high for 4 hours. In the last 30 minutes add your shrimp. 
  • Serve by itself, or over cauliflower rice. Enjoy!
