Summer Berry Salad

 Ingredients:

  • kale
  • blueberries
  • red onion
  • pecans
  • goat cheese

Dressing: 

  • 1 cup strawberries
  • 1/4 cup balsamic vinegar
  • 1/4 cup EVOO
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 clove garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preperation:

For the dressing take the stems off the strawberries and cut in half. Add the berries and the remaining dressing ingredients to a blender and blend till smooth. I was able to store this in the fridge for a week.  

 

For the salad, I like to be efficient so I prepped once and ate 3 times. I washed, chopped and massaged the kale and separated it into 3 Tupperware bowls. I added a handful of blueberries and some chopped red onion to each and put these in the fridge next to my dressing. This makes your lunch quick and easy. Take out your salad container, and the goat cheese, pecans and dressing, shake it up right in the Tupperware and enjoy! If you want to add a protein to this I recommend leftover grilled chicken!
