• olive oil

  • 1/2 diced yellow onion

  • 1 diced green pepper

  • 3 minced garlic cloves

  • 1 tsp cumin

  • 1 tsp paprika

  • pinch of cayenne

  • 1 can plum tomatoes with juice roughly chopped

  • salt and pepper to taste

  • 6 large eggs

  • feta to top

  • fresh parsley to top


In a large skillet over medium heat saute your onion and pepper till soft. Add the garlic, paprika and cayenne and saute another 2 minutes.

Add your tomatoes and season with salt and pepper until the sauce has thickened.

Crack the eggs into the sauce and cover. Cook till the egg yokes has a white film over it. This will take about 8 minutes.

Sprinkle the feta and parsley over the dish and serve immediately! This is great for an easy family breakfast. Everyone can grab some pita for dipping in the extra sauce as well!
